This is a personal favorite of mine and has been a staple of uni life.
Will feed 2 people
Ingredients:
Risotto rice (one small mug)
Onion
Bacon (2/3 rashers)
Chicken Breast
White wine (small glass)
Chicken stock (or vegetable stock) (just over a pint)
Frozen peas (big handful)
Cream (single or double)
Black pepper
Grated hard cheese (Parmesan is usually best)
Rocket
Method:
First put the chicken breast in the oven or on the grill and season to taste. Usually will take 25 mins in the oven gas mark 5.
Now chop onions and bacon and lightly fry with oil or butter in a deep saucepan. Do this until soft and then add rice.
Fry the rice until it starts to go translucent and then slowly add the wine.
Next is to slowly add the stock, making sure to continually stir, don't want the rice sticking to the pan!
This part can take a while (up to 20 mins) and you will need to keep tasting to see how well the rice is doing. When it starts to soften add the frozen peas and again, stir well.
Once the peas are cooked the stock should all be absorbed into the rice and all thats left is the finishing touches.
This is simply to stir in some cream, then take off the heat and mix in the grated cheese and black pepper. The amounts all depend on how creamy and cheesy you like your risotto.
Now all that's left to do is to spoon to risotto onto the plate, place cooked chicken breast on top and garnish with rocket.
